Soup of wine |
3 cups dry white wine
2 tablespoons sugar
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 cup butter
3 tablespoons flour
3 cups of milk
6 egg yolks
1/4 cup Parmesan cheese
salt and pepper
Wine boil, stir in the sugar, cinnamon and nutmeg. In a thick bottom pan melt the butter, stir in flour, slowly add milk, stirring constantly until a thick sauce. Add salt, pepper, and then slowly pour the hot wine and stir until the soup will have a smooth consistency. Just before removing from heat stir in egg yolk and sprinkle with the Parmesan cheese and serve immediately.
